Have you ever been in the mood for a Little Something Sweet but not in the mood to bake a whole batch?  Credit is due to one of my daughters who found this quick, easy and yummy recipe on Buzzfeed Food, and to Number 2 Pencil where the recipe originated. There are more single serving recipes where this one came from.

Chocolate Chip Cookie in a Cup

Ingredients:

1 Tablespoon butter

1 Tablespoon granulated sugar

1 Tablespoon of firmly packed dark brown sugar

3 drops of vanilla extract

small pinch of Kosher salt

1 egg yolk (discard the egg white)

scant 1/4 of all purpose flour

2 Tablespoons of semi sweet chocolate chips

Directions:

Melt one tablespoon of butter in a microwave safe mug. Add one tablespoon of white sugar, one tablespoon of brown sugar, a few drops of vanilla and a pinch of kosher salt. Stir with a fork. Separate your egg and add the yolk only to your cup. Stir again. You will have a soupy mixture.  Measure a slightly less than full1/4 cup of all-purpose flour and stir to combine. Add the chocolate chips, and give a final stir. Pop your mug in the microwave for 40-60 seconds depending on your microwave. Start checking for doneness at the 40 second mark. You’ll know it’s ready when it looks like a cookie. Serve warm and a la mode if desired.

  3. Hi Naomi-Looks great, I save it in my electronic recipe file. I pinned a recipe for single serve apple cobbler in Pinterest. Similar idea if you want a copy of it. I’ve found many great recipes on Pinterest and highly recommend the site. Lots of great do-it-yourself projects too. One of the best recipes I got from there was Slutty Brownies. Consists of a brownie with an oreo cookie in the middle of it and a chocolate chip cookie crust. Yumo!
